Getting started

Before diving into recipes, gather a few kitchen basics. You’ll need a mixing bowl and whisk or hand mixer. A freezer-safe container (like a loaf pan or lidded tub). And an ice cream maker for custard-based recipes.

For ingredients, most ice cream starts with a simple base, cream, sugar, and flavorings. No-churn recipes often rely on sweetened condensed milk and whipped cream, while traditional styles use eggs for richness. 

No-churn ice cream

No-churn ice cream is easy, delicious and is perfect for beginners. With just a few ingredients and no machine required, you can whip up a batch in minutes.

Classic Vanilla Bean

Ingredients:

  • 2 cups heavy whipping cream
  • 1 can (14 oz) sweetened condensed milk
  • 2 tsp vanilla extract or paste 

Instructions:

Whip the cream to stiff peaks. Gently fold in the condensed milk and vanilla. Pour into a container, smooth the top, and freeze for at least 6 hours.

Chocolate Fudge Swirl

Use the base above, then fold in 1/2 cup chocolate syrup or fudge before freezing. For extra texture, add chopped dark chocolate or brownie bits.

Strawberry Cheesecake

Fold in 1/2 cup strawberry jam and 1/2 cup crushed graham crackers. For a tangy twist, add 2 ounces of softened cream cheese when mixing the condensed milk.

Custard-based ice cream

Custard-based ice cream is rich and creamy. This method uses egg yolks to create a luscious, scoop-shop style ice cream. You’ll need to cook the base gently, then chill it before churning in an ice cream maker.

French Vanilla Ice Cream

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 4 egg yolks
  • 3/4 cup sugar
  • 2 tsp vanilla extract

Instructions:

Warm the cream and milk in a saucepan. In a separate bowl, whisk yolks with sugar. Slowly add the hot milk to the yolks, stirring constantly (this is called tempering). Return everything to the pan and cook over low heat until thick enough to coat a spoon. Do not boil. Remove from heat, add vanilla, and chill. Churn in an ice cream maker, then freeze for 4+ hours.

Mint Chocolate Chip

Add 1 tsp peppermint extract and green food coloring (optional) to the base above. Stir in 3/4 cup mini chocolate chips after churning.

Salted Caramel Ice Cream

Fold 1/2 cup homemade or store-bought caramel sauce and a pinch of sea salt into the churned custard base.

Dairy-free Ice Cream Options

You don’t need dairy to enjoy creamy ice cream. These versions use plant-based ingredients and still pack a ton of flavor.

Coconut Chocolate Ice Cream

Ingredients:

  • 2 cans full-fat coconut milk
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup or agave
  • 1 tsp vanilla

Instructions:

Blend everything until smooth. Chill the mixture, then churn or freeze in a shallow dish, stirring every hour until firm. 

Banana “Nice Cream”

Blend 3 frozen bananas until creamy. Add mix-ins like peanut butter, cocoa powder, or fresh berries. Enjoy immediately or freeze for a firmer texture.

Fun seasonal flavors

Want to get creative? Try these flavor-packed ideas:

Pumpkin Spice (Fall)

Add 1/2 cup pumpkin purée, 1 tsp cinnamon, and a pinch of nutmeg to a no-churn base.

Fresh Peach (Summer)

Fold in puréed and diced fresh peaches.

Peppermint Bark (Winter)

Stir in crushed candy canes and chocolate chunks for a festive treat.

Tips for ice cream success

To prevent ice crystals, cover your ice cream with plastic wrap pressed against the surface to minimize air exposure.

Adding a splash of alcohol (like vodka) helps keep ice cream scoopable without tasting boozy.
